Confetti Salad

Found this in the newspaper-great fiber!

2 c. shredded red cabbage
19 oz. can cannellini beans, rinsed and drained
11 oz, can drained mandarin oranges
1/3 c. walnuts, toasted
2 lg. sliced scallions
3 tbs. olive oil
2 tbs. balsamic vinegar
2 tbs. orange juice
Salt and pepper

Put vegetables in bowl. Whisk together dressing and toss with vegetables. Serve.
