1 ¼ lb. chicken breast, sliced
Olive oil
1 large diced tomato
1 english cuke, sliced
½ sliced red onion
2 tbs. cider vinegar
1 tbs. olive oil
3 tsp. minced fresh oregano. Or ½ tsp. dried
2 tsp. minced fresh mint or ½ tsp dried
½ tsp. salt
Lettuce leaves and pita bread, halved
Saute chicken. Cool. Combine chicken, tomato, cuke, herbs, and onion. Drizzle w/vinegar and oil. Toss to coat. Serve in pita bread w/ lettuce, great w/ Greek Pasta Salad.
